On the one hand, dynamic consumer behaviour and the ever higher standards required to meet the demands of today's guests require compelling concepts which can stand the test of time. Yet on the other hand, concepts which are variable and adaptable are also required, meaning substantial budgets dedicated to innovation but the same high level of economic risk.
